50 dg škarpine 50 dg ugora 25 dg sipe 1 dl maslinova ulja 1 glavica luka 4 režnja češnjaka 1/2 vezice peršina 30 dg rajčice ili žlica koncentrata rajčice 2 žlice brašna 1 dl bijelog vina 2 lovorova lista grančica ružmarina 5 zrna papra sol
Ribu očistiti,narezati na veće komade, uvaljati u brašno i popržiti s obje strane na zagrijanom ulju. Izvaditi i staviti na topli tanjur. Na istom ulju popržiti isjeckani luk, češnjak i peršin. Dodati očišćene i na kolutiće narezane sipe. Pirjati povremeno dolijevajući toplu vodu. Dodati oguljene i narezane rajčice ili rastopljeni koncentrat. Posoliti, popapriti, začiniti lovorom i mažuranom. Kad je sipa mekana, vratiti ribu, preliti vinom i pirjati dok se umak ne zgusne. Skinuti s vatre i poslužiti uz palentu.
